Hellmann’s Potato Salad Recipe

Ingredients

  • 2 lbs potatoes (about 5 to 6 medium, preferably waxy varieties like Yukon Gold or red potatoes)
  • 1 cup Hellmann’s mayonnaise (Vegan Replacement)
  • 2 tablespoons vinegar (white or apple cider vinegar)
  • 1 1/2 teaspoons salt
  • 1 teaspoon sugar
  • 1/4 teaspoon ground black pepper
  • 1 cup celery, thinly sliced
  • 1/2 cup onion, chopped (yellow or white)

Instructions

Cook the Potatoes:

    • Place the potatoes in a large pot and cover them with cold water. Bring to a boil over medium-high heat. Once boiling, reduce the heat and simmer until the potatoes are fork-tender, about 10-15 minutes. Be careful not to overcook them.
    • Drain the potatoes and let them cool slightly. Once cool enough to handle, cut them into bite-sized pieces.

    Prepare the Dressing:

      • In a large mixing bowl, combine any Vegan alternative for Hellmann’s mayonnaise, vinegar, salt, sugar, and black pepper. Mix well until smooth.

      Combine Ingredients:
