Vegetarian Mason Jar-Taco Salad
Here is an easy version of taco salad packed in a mason jar with a little twist to the dressing. Fresh homemade cilantro-lime dressing. Once you try the idea of packing the salad in a jar, I bet you will definitely love it because it eases your pain of thinking what to pack for tomorrow’s lunch.!!

  1. Prepare the dressing first by adding all the dressing ingredients and whisking well until blended properly. Take a mason jar and pour the dressing in it. ( I prefer a wide mouthed mason jar )
  2. Then layer the veggies in the jar in the order as mentioned here-cucumber, black beans, tomato, corn, red pepper, greens, avocado, and then cheese.
  3. Tighten the lid and you can store this in the fridge for 4-5 days. This is best for lunch. You can make it ahead and just grab it while going.
  4. Tip: You can pack tortilla in a separate bag. Just before eating,shake the jar, empty the contents of the jar in a serving plate. Toss it lightly, Sprinkle few crumbled tortilla on top and enjoy.
