Here is zesty, colorful vegetarian taco salad.

  1. Take oil in a medium skillet on medium heat. Add onion, stir and let it cook for 5 minutes. Add in corn kernels. Add 1/2 tomato, stir. Then add in rice, beans, chilli powder, salt, oregano. Stir and let it cook for 5 minutes or until the tomato cooks. Stir in between. Let it cool.
  2. Chop the remaining 1 1/2 tomatoes, mix it with salsa, cilantro and sprinkle oregano. Mix lightly.
  3. Take a large bowl. Add lettuce along with bean mixture, above prepared salsa and tomato mixture and shredded cheese. Sprinkle tostittos on top and toss lightly. Enjoy with more salsa if you want.
