  1. First cook the quinoa and keep it aside. For that, take 4 cups of water in a saucepan and bring it to a boil, add in quinoa, some salt and let it cook on medium flame by covering the lid and stirring occasionally. Let all the moisture absorb. This will take about 15-20 minutes.
  2. In the meanwhile, Roast the veggies beets and sweet potatoes. Evenly coat them with some olive oil and salt and line them on a baking tray and roast them at around 400 F for around 20-30 minutes or until the veggies are tender.
  3. Take a serving bowl and add in all the ingredients one after another and toss lightly. Drizzle your favorite vinaigrette or simple olive oil, lemon juice, salt and pepper dressing by combining all these four ingredients and whisking well.
  4. Serve and enjoy. You can always keep the left overs and eat it later. This salad is perfect for lunch.
