Spinach and Quinoa Salad
This is a protein rich salad full of Mediterranean flavors.. Very healthy and easy to make. Soft and well cooked quinoa, topped with tangy lemony dressing, fresh spinach, sun dried tomatoes and roasted almonds. Be careful while cooking quinoa. It may get overcooked and become mushy. So keep checking it while cooking.

Instructions
To cook Quinoa:
  1. Take a saucepan and bring 2 cups of water to boil.(double the amount of quinoa). Add quinoa and let it cook for 10-12 minutes by covering the lid on a medium flame(stirring occasionally) till the water is absorbed and quinoa is soft and well cooked. Keep it aside and let it cool.
For Dressing:
  1. While the quinoa is cooking, meanwhile you can make the dressing by whisking together all the dressing ingredients till everything is mixed properly.
For Salad:
  1. Once the quinoa is cooked, transfer it to a serving bowl. Drizzle the dressing on top of it and toss well. Wait till the quinoa is cooled then add sun dried chopped tomatoes and spinach. Mix well. Garnish with roasted almonds. Serve immediately.
