  1. Take a small saucepan, add water and bring it to a boil.
  2. Add in quinoa and salt and stir, cover the lid and lower the flame and let it cook for 15 mins.
  3. Transfer quinoa into a bowl and let it cool. Add parsley, cucumber, tomatoes, avocado and oil to quinoa. Mix and season to taste with salt and pepper.
