Sauteed Spinach, Onion and Mushroom Salad
This salad will definitely turn out to be the favorite for all the vegetable lovers. Its a protein rich salad in which the veggies are sauteed in a combination of coconut oil and ghee. This compliments the veggies perfectly. It can be served as a side dish to any of your main course meal.

  1. Take a wide pan, add oil and ghee and heat it on high flame.
  2. Add sliced onions and minced garlic and saute it for 10 mins by stirring constantly.
  3. Reduce the flame to medium and let the onions saute for 20 more mins and stirring frequently.
  4. Add vinegar to deglaze the pan. Now add sliced mushrooms, salt and pepper and let it cook until the mushrooms are tender and soft.
  5. Now stir in the spinach on low heat and let it cook until the spinach wilts. Transfer in a serving bowl and serve immediately. You can enjoy this as a side dish to any main course meal.
