Roasted Veggie Power Salad
This Salad is simply a perfect vegetarian meal on its own. It has a combination of roasted soft veggies, sweet blue berries, pear, navy beans for protein content, fresh watercress, crunchy pecans topped with amazing balsamic vinaigrette. Very colorful, giving it a mouth watering sight. You can add more veggies of your choice while roasting. This salad will instantly boost your energy with all its super ingredients.

Instructions
  1. For Dressing: Mix all the dressing ingredients and whisk thoroughly until everything is combined properly. Or you can add all the dressing ingredients in a container with a lid. Close the lid and shake the container/bottle well such that everything is blended well. Store it in the refrigerator.
  2. Preheat the oven to 400 degrees F.
  3. Take cauliflower florets and sweet potato cubes and toss them with salt, pepper, turmeric and olive oil. Toss well. Arrange them on a sheet of parchment paper on a tray.
  4. Let the veggies roast in the oven for around 15-18 mins or until tender. Flip the veggies once at the middle of the process. Just be careful that the veggies are not over roasted and becomes mushy. Let them to cool down.
  5. On a serving tray, set a layer of watercress and on top of it add these roasted veggies, pear cubes, blueberries, cooked beans and pecans.
  6. Drizzle the dressing on top and toss lightly. Serve and enjoy.
