Quinoa Salad.
This is a very healthy Salad. Quinoa is gluten free and is rich in protein.This makes a very colorful salad with fresh lettuce, tangy oranges, crunchy cucumber and juicy tomatoes. The Ginger dressing gives it a refreshing kick.

For Dressing:
  1. Combine all the dressing ingredients in a bowl till everything is mixed properly.(To get ginger juice, shred ginger with a fine shredder or zester and squeeze its juice by using your fingers).
For Cooking Quinoa:
  1. Take a saucepan and bring water to boil. Add quinoa and let it cook for 10-12 minutes by covering the lid on a medium flame till the water is absorbed and quinoa is soft and well cooked. Keep it aside and let it cool.
To Proceed for the Salad:
  1. In Salad serving bowl, spread the lettuce, arugula, quinoa (save about 1/4 cup quinoa) layer wise. Then add tomatoes, cucumber and orange. Drizzle the salad dressing on top of it. Sprinkle the remaining quinoa and finally spread feta cheese and serve immediately and enjoy this delicious salad..
