Pasta with Jalapeno pesto
This healthy pasta salad features bold summer flavors, including tangy tomatoes, soft corn and black beans tossed in spicy, fresh pesto! It's a great vegetarian side dish for potlucks and barbecues.

Instructions
  1. Roast the almonds or green pumpkin seeds on a medium flame till light brown. Leave it aside to cool.
  2. For making the pesto, Take a blender and add herbs, jalapeno, lemon juice, almonds or papitas, garlic and salt. Blend. Drizzle olive oil and blend again till you get a fine mixture.
  3. Boil water in a saucepan and cook pasta in it by adding salt till it is well cooked. Drain the water and save about 1 cup of it.
  4. Add the prepared pesto to the pasta so that the pasta is lightly coated and toss well. You may not need all the prepared pesto. Sprinkle few drops of the pasta cooked water on this and toss well.
  5. Add remaining ingredients i.e cooked black beans, corn, cherry tomatoes, feta or avocado, salt and mix well. Let it marinate for about 20 mins. Serve and enjoy.
