Lentils are packed with protein and is a very good source of protein for vegetarian lovers. Soft lentils tossed with tangy and juicy tomatoes, fresh dill and basil leaves, with a drizzle of olive oil and vinegar makes it a tasty and fresh salad to enjoy any time.
Take a saucepan and bring about 4 cups of water to boil. Add lentils, garlic and salt and let it cook on a medium flame until the lentils are tender by stirring occasionally. It should take around 25 mins. Drain and transfer it to a bowl.
Toss in tomatoes, scallions, basil leaves, dill leaves, vinegar, olive oil, salt and pepper as per the taste and mix well. Serve it hot or at room temperature.
