Lentil and Arugula Salad
This is a protein rich and a very healthy salad including very few easily available ingredients like arugula, lentils, cashews and whole wheat bread. Arugula or rocket salad has a variety of health benefits, lentils are rich in protein content and cashews are good for cardiovascular health. This is a very good choice of salad if you want to increase your protein intake. Easy to make and gets ready in just 12 mins.!!

  1. Take a pan and roast cashews for about 2 mins by stirring continuously.Transfer it to a bowl.
  2. To the same pan add 2 tbsp olive oil and chopped onions and let it fry on a low flame for 3 minutes by stirring occasionally.
  3. Meanwhile, chop dried tomatoes and pepper and stir in and let it cook for another 2 minutes and add salt and pepper to it.
  4. Transfer it to a bowl. Add remaining olive oil to the pan. Make bread slices into big croutons. Fry these in the olive oil until crunchy. Sprinkle salt.
  5. Cook lentils as per package instructions or take a saucepan, add water and salt. Bring water to boil, add lentils and cook on medium flame by covering the lid and stirring occasionally until the lentils are soft or tender.
  6. Take a serving bowl, set the bed of arugula leaves , add lentils, fried onion mixture, cashews, lemon juice,salt and pepper ( if needed ). Mix lightly and serve with fried croutons.
  7. Tip: you can also add raisins and little amount of honey for a different kick.
