Gnocchi Salad with Spinach and Mushrooms-vegetarian Salad Recipes
An easy vegetarian salad dinner recipe that uses only one pot and is ready in under 30 minutes! This works well with packaged gnocchi. Note that in adding extra ingredients to the pan fried gnocchi, it might lose its crispness, but it still retains a really nice texture.

  1. Heat oil in a pan on medium heat.
  2. Once the oil is hot, add the gnocchi, separate them, add salt, pepper and red pepper flakes and let it cook for around 8 to 10 minutes or until golden brown and light crispy by stirring occasionally.
  3. Remove gnocchi from the pan. Now take some more oil in the pan if needed and add mushrooms and let it cook for around 3-4 minutes or until soft. Add the gnocchi back to the pan and then add sun dried tomatoes, white beans and spinach. Let it cook till everything is heated through.
  4. Add salt and pepper if needed. Garnish with grated Parmesan cheese and serve hot..
