Falafel Salad
This is definitely a delicious salad. Quite different from the routine salads which you will love to eat. Crunchy balls when mixed with fresh lettuce, tangy tomatoes and cucumber will give an appealing and mouth watering sight. Make sure you use the chick peas which are soaked overnight to make the falafels more crunchy. This recipe makes around 16 balls.

How to make falafels:
  1. Take a blender. Add half of the chick peas and blend until they are broken into smaller pieces. Transfer into a bowl.
  2. Then add the remaining chick peas along with parsley, garlic, onion, cumin, coriander, salt, lemon juice, cayenne pepper, baking soda and water. Blend till you get a fine paste. Add it to the bowl of coarsely grounded chick pea. and mix well.
  3. Add flour, beaten egg and sesame seeds and knead it into a dough. Take little dough at a time and roll into balls. Place these balls on a parchment paper and put it in the fridge for 1 hour. Some of the water will seep out onto the tray.
  4. Take a deep pan and add oil for frying the balls on a medium flame. Oil should be enough to cover half of the falafel. Carefully slide 5 or 6 balls at a time using a spoon. Fry them until golden brown on both the sides.The oil should not be too hot. Otherwise the balls will turn brown on the outside and will remain uncooked on the inner side.
For Dressing:
  1. Whisk together all the dressing ingredients in a bowl till everything is mixed properly.
For Salad:
  1. Add lettuce, cucumber, tomatoes and onion onto a plate. Place few falafels on the top. Drizzle the dressing and serve.
