Crunchy Veg Salad with Tahini-lemon dressing
This salad is packed with high fiber ingredients such as chickpeas, apples, and raisins. It's flavored with sesame tahini (sesame paste) that is high in both nutritious minerals and polyunsaturated fat, which is considered a "heart healthy" type of fat.

Instructions
  1. Take a large bowl and add all the salad ingredients.
  2. Take another small bowl for dressing ingredients. Add in all the dressing ingredients except water. Whisk well by adding about 1tbsp water each time until you get the desired dressing consistency. Check taste for salt and pepper seasoning.
  3. Pour the dressing on top of the salad and toss well. Garnish with parsley, coconut and almonds. You can add some tofu on top for protein. Serve and enjoy.
