Cabbage and Cashew Salad
This is a very colorful, mouth watering salad which is rich in nutrients and protein. Fresh crunchy cabbage, creamy avocados and cashews topped with a tangy- garlicky dressing makes it a great salad for a simple lunch

  1. Chop the cabbage finely into small bite sized pieces and toss it with salt and set aside to drain for an hour.
  2. Whisk together all the dressing ingredients in a bowl until everything is mixed properly. Set aside.
  3. Toss cabbage in a colander to drain the water. Transfer it to a bowl and add carrot, onion, edamame, roasted cashews and avocados ant toss well. Pour the salad dressing and mix well to coat evenly. Serve. It will taste better if you set it in the refrigerator for some time to marinate thoroughly.
