For roasting cherry tomatoes, pre-heat the oven at 400 F. Take a baking tray, line the tomatoes, sprinkle with salt and pepper and drizzle some olive oil. Let them roast for about 30 minutes. Keep it aside to cool.
Take a large bowl, combine brown rice, cucumber, tomatoes, corn, crumbled feta, scallions and chick peas. Toss gently.
Take a small bowl, add all the dressing ingredients and whisk well. Drizzle on top of the salad and toss well. Check for seasoning. Serve and enjoy.
