A healthy combination of quinoa, black beans, tangy cabbage salad and flavorful salsa. Top it up with a drizzle of fresh yogurt or any of your favorite sauce. This salad makes a perfect dinner. Try it and you will be amazed by how it turns out.
Bring water to boil in a medium saucepan, add quinoa and salt and let it cook on medium flame until soft or all the water is absorbed. It will around 20 mins. Sprinkle cumin powder and slightly mix. Cover and keep it aside.
Take a large bowl, whisk in olive oil, salt, pepper and vinegar. Add in cabbage and onion and toss well to coat evenly.
Take a medium skillet, heat 2 tsp olive oil on medium flame. Add in poblano and cook by stirring until slightly soft. Now stir in beans and chilli powder stirring for 2 more minutes. Turn off the heat.
Now take serving bowls, in each bowl add 3/4 cup of quinoa, 1/2 cup bean mixture, 1/4 cup shredded cheese. Top it up with 3/4 cup of cabbage salad and 2 tbsp of salsa. Serve and enjoy..
