Beetroot Avocado and feta Salad
This Salad is loaded with iron, vitamin A and C .You can toss all the ingredients together and its ready. You can opt for either roasted or raw beets depending on how you wish. Ripe and soft avocados, tangy oranges, crispy and fresh lettuce topped up with feta cheese, crunchy roasted pistachios and a flavorful dressing makes it a wonderful salad.

  1. You can roast the beetroot or can directly use the raw cubes. However way you prefer. To roast it, take a pan and drizzle some olive oil and add the beetroot slices and let it roast on a medium flame, covering the lid. Turn the slices occasionally by using a spatula. It should take around 10 mins or until the slices are tender. Do not let it burn.
  2. Once done, sprinkle some orange juice on it and toss well.
  3. Place lettuce in a large bowl, add avocado cubes, orange segments, beets.
  4. For Dressing: Whisk all the ingredients together except poppy seeds. Once the mixture is well blended add in poppy seeds and stir well.
  5. Toss the salad with the dressing then add roasted pistachios and crumbled feta and toss gently. Serve immediately once the dressing is added.
