Barley Salad
This is a very healthy salad which includes whole grain barley sauteed in a fresh and healthy combination of colorful vegetables and herbs. Barley being very rich in fiber content, vitamins, minerals anti-oxidants, heart health and diabetes protection makes it a very healthy salad.

Instructions
  1. Take a pan and add olive oil.
  2. Add bell peppers, onion, capsicum and corn kernels and saute till the vegetables are half cooked.
  3. Add cooked barley to the vegetables and saute for 3-4 minutes.
  4. Add the remaining ingredients i.e garlic, red chiili flakes, salt, pepper, cumin, parsley, thyme, vinegar and mix well.
  5. Transfer in a bowl and serve immediately.
