A light, refreshing, simple yet delicious salad. Rich with the fiber from wheat berries which makes the salad a filling one. Freshness of heirloom salad and parsley will give you a refreshing treat.

Ingredients
For Salad:
For Dressing: 3 mustards salad dressing
Instructions
  1. Bring 4 cups water to a boil in a soup pot. Add salt and wheat berries, reduce heat to medium, cover and cook until wheat is tender, slightly “al dente”, about 60-90 minutes
  2. In the meanwhile, prepare the dressing by taking all the dressing ingredients and put them in a closed jar. Make sure that the lid is tightly closed. Shake it well until mixed properly. Refrigerate it for later use if you want.
  3. In a large bowl, combine cooked wheat berries, diced avocado, sliced tomatoes and chopped parsley Add salad dressing as per requirement and carefully toss all the ingredients together.
  4. Serve and Enjoy.
